Crispy Salmon Patties

what you need
  • 1 can (15-16 oz.) salmon
  • 1 egg
  • 1/3 cup onion, minced
  • 1/2 cup flour
  • 1-1/2 tsp. baking powder
  • 1 cup oil
make it
Drain salmon, saving liquid. Place salmon in medium size mixing bowl and debone salmon. Add egg and onion to deboned salmon, blending well until mixture is sticky. Stir in flour, mixing well.

In small bowl, combine baking powder with 2 Tbsp. of the saved liquid, stirring until mixture is frothy. Pour baking powder mixture into salmon mixture, mixing well.

Form into small patties and fry in oil until golden brown (about 5 minutes).
Notes
Serve while piping hot and pass the ketchup or Kraft Mayonnaise.

Oreo Cookie Dessert

Oreo Cookie Dessert

1 pkg. Oreo cookies, crushed (save a few crumbs to sprinkle on top)
1 stick butter
1 (8 oz) cream cheese
2 pkg. Instant vanilla pudding
3 cups milk
1 large container Cool Whip

Melt butter and put in 9 x 13 inch pan.  Mix crushed cookies with butter and spread in bottom of pan.  Mix together cream cheese, pudding and milk.  Spread on top of cookie crust.  Spread Cool Whip on top of pudding mixture.  Sprinkle with reserved cookie crumbs. Chill.

Green Bean Casserole

Ingredients:

1 (10 3/4 oz.) can Cream of Mushroom Soup (I Use Campbell's)
3/4 cup milk
1/8 tsp. black pepper
2 (9 oz. each) pkgs. frozen cut green beans, thawed*  ( I use 2 cans of green beans with no salt)
1 1/3 cups FRENCH'S® Original or Cheddar French Fried Onions

Directions:

MIX soup, milk and pepper in a 1 1/2 -qt. baking dish. Stir in beans and 2/3 cup French Fried Onions.
BAKE at 350°F for 30 min. or until hot.
STIR. Top with remaining 2/3 cup onions. Bake 5 min. until onions are golden.

Salmon Patties (Mom's Recipe)

Salmon Patties (Mom's Recipe)
 
1 (14.75 oz. can - 418 g) Chicken of the Sea Pink Salmon, drained
2 eggs, beaten
Approx. 16-20 crackers (use enough crackers to hold the patties together)
 
Mash with fork the drained  salmon and eggs until well mixed. Crumble crackers into mixture and mix well.  Form patties and place into skillet with melted butter and fry on both sides until lightly browned but crispy on edges.

Goulash

Goulash (Mom's Recipe)

Fry & Season:
1 lb. hamburger
1 onion - chopped
1 green pepper -  chopped

Cook:  1/2 pkg. egg noodles or 1 cup macaroni

Mix With: 
1 - 2 cups cooked corn
1 can tomato soup
1/2 cup olives - chopped

Mix all ingredients together. Bake 350 degress for 30 minutes.

Strawberry Dessert

Strawberry Dessert - Mom's Recipe

1 can strawberry pie filling
1 can eagle brank milk
1 (No.2) can crushed pineapple (drained)
1 large container of Cool Whip

Mix all together and freeze in pan 9 x 13 or dish.  This does not have to be frozen.  You can use it unfrozen- real good that way.  Can use other pie fillings.  Cherry is also good.
